Comparing the taste of juwari and ni-hachi soba

Yukan Club Soba Restaurant opens only when there is a reservation for only one group at a time. The popular menu is the set meal of juwari (made from 100% buckwheat flour) and ni-hachi (made from 80% buckwheat flour and 20% wheat flour) soba. It is an exceptional experience to savor the two different kinds of soba in one meal. The dessert is yogurt with red rhubarb, one of the specialties of Fujimi town.

When the weather gets cold from the end of September to May, Yukan Club serves Touji Soba. To enjoy this dish, you take soba in a small basket ladle and dip (touji) in the pot cooking delicious wild vegetable soup.

Juwari soba made with locally grown ingredients

Yukan Club uses the buckwheat flour grown in Fujimi, and they harvest the flour used in ni-hachi soba from their garden. With the crystal clear water drawn from Yatsugatake spring, they make excellent soba using all local ingredients.

Message from Owner

Juwari soba with no binding agent requires certain kind of buckwheat grains and specific way of grinding and adjusting the temperature. It is challenging, yet also incredibly rewarding to make delicious juwari soba. Please come to experience the rich flavor of juwari soba, as well as smooth ni-hachi soba and warm touji soba.

We welcome one group (four to six people) at a time by reservation only. Please understand that we are a small family-run restaurant with an irregular holiday.
